Filipino Cuisine Takes Global Stage

The DOT's national gastronomy tourism roadmap aims to elevate Filipino dishes, promoting local flavors and sustainable practices.

What makes Filipino cuisine stand out on the global stage? The Department of Tourism (DOT) in the Philippines is betting that the answer lies in the rich, diverse, and unique dishes found across the country’s regions.

The DOT is crafting a national gastronomy tourism roadmap aimed at putting Filipino food at the forefront of both local and international tourism.

 

The Roadmap to Culinary Delight

Tourism Secretary Christina Frasco unveiled the proposed plan during the inaugural UN Tourism Regional Forum on Gastronomy Tourism for Asia and the Pacific in Cebu. She emphasized the potential of Filipino cuisine to attract tourists and generate employment, highlighting the need for a unified national effort.

 

“We view the time now as being ripe for Filipino food to be at the forefront of the top-of-mind destinations in the world for food tourism,” said Frasco.

The roadmap will institutionalize government support for Philippine gastronomy, ensuring quality and availability of ingredients while protecting the integrity of traditional dishes.

 

Regional Cuisines Take Center Stage

The initiative aims to be inclusive, showcasing both popular and lesser-known dishes from all regions. Frasco pointed out that cuisines from areas like Mindanao and the Cordilleras hold significant cultural heritage that deserves global recognition.

For example, Mindanaoan cuisine reflects pre-colonial Spanish influences, while indigenous foods from Northern Luzon offer a unique taste of Filipino heritage.

 

A Feast for the World

At the forum, over 500 delegates from more than 40 countries enjoyed a feast of local dishes, including specialties from the Caraga region like mudfish bacalao and chicharon pijanga.

These regional delicacies highlight the rich marine resources and culinary diversity that the Philippines has to offer beyond its famous beaches.

 

Economic and Cultural Benefits

The gastronomy tourism roadmap is set to bring numerous benefits:

  • Economic Growth: Increased demand for local ingredients can boost local farming and food production industries.
  • Job Creation: New employment opportunities in culinary tourism and related sectors.
  • Cultural Preservation: Efforts to protect traditional dishes will help preserve the Philippines’ culinary heritage.
  • Tourism Expansion: Promoting lesser-known regions can diversify and expand tourism beyond traditional hotspots.

 

Sustainable and Inclusive Approach

The DOT assures that the roadmap will be inclusive and sustainable. It aims to engage local communities, promote the use of local and seasonal ingredients, and support small-scale producers.

By fostering stronger connections between agriculture and tourism, the plan seeks to create a more sustainable and equitable food system.

 

Caraga’s Hidden Treasures

Ivonnie Dumadag, DOT Caraga Region Director, emphasized that food tourism allows regions like Caraga to showcase their unique offerings. Known for Siargao Island’s surfing waves, Caraga now aims to attract tourists with its rich marine products and culinary delights.

 

“Caraga is popularly known for Siargao but this time we want to showcase that Caraga has more to offer beyond its waves,” Dumadag said.

 

Promoting Sustainable Practices

The roadmap also promotes several sustainable practices:

  • Local Sourcing: Encouraging the use of locally-sourced and seasonal ingredients.
  • Culinary Traditions: Preserving traditional cooking methods and recipes.
  • Food Waste Reduction: Implementing thoughtful menu planning and portion control.
  • Organic Farming: Supporting organic and eco-friendly farming practices.
  • Energy Efficiency: Encouraging energy-saving measures in food establishments.

 

The Final Word

The national gastronomy tourism roadmap is a bold step towards highlighting the Philippines’ unique culinary heritage. By promoting regional dishes, supporting local farmers, and ensuring sustainable practices, the DOT aims to position Filipino cuisine on the world stage.

This initiative not only promises economic growth but also celebrates and preserves the rich cultural tapestry of Filipino food.
